What kind of bit is best to use on a 10 year old ranch riding galding?

i recently purchased a 10 year old ranch horse he rode great first couple of times recently went to ride he was very head strong wants to do whatever he wants and wants to go wherever he wants i am a begining rider and want to know if a bit or a hakemore or a combo of both might help any suggestions thanks
